Potatoes with Peppers Co -Founder & Chef, Connoisseur Hospitality Chef Potato cubes - 1 cup Onion Cubes - ¼ cup Green Capsicum cubes - ¼ cup Yellow Capsicum cubes - ¼ cup Spring onions - ¼ cup Cashew nuts - 1 tbsp Garlic chopped - ½ tsp Ginger chopped - ½ tsp Ingredients Blanch potatoes, keep aside. Heat Godrej Sesame Oil, sauté cashew nuts, ginger, garlic and add red chilli paste. Add capsicums, sauté them for few minutes. Add ketchup, sugar and mix well. Add stock or water and let it simmer for few minutes. Add the blanched potatoes, salt, vinegar and add cornflour. Mix well, adjust the seasonings, and serve hot garnished with Spring onions Method Red chilli paste - ½ tsp Tomato ketchup - 1 tbsp Salt - to taste Vinegar - ½ tsp Sugar - ½ tsp Corn flour - 1-2tsp Godrej Sesame Oil - 2tbsp (Best for cooking Asian foods) 39
