Batata Song Cullinaire - ITM College, Oshiwara Chef Boiled and peeled baby potatoes - 500g Finely chopped onions - 750g Dry Red chillies - 4 to 5 Red chilli powder - 4 tsp Ingredients In a little water, soak deseeded red chillies, coriander seeds, tamarind, red chilli powder and hing for half an hour. Grind it to the consistency of a thick masala paste. Heat the Groundnut oil in the pan, add finely chopped onions. Cover and cook till translucent pink. Add the masala paste and fry till oil starts leaving the sides of the pan. Take a fork and make indentation on the boiled and peeled baby potatoes. Add these potatoes and sprinkle salt as per taste and cook them it the masala for 7 to 8 mins. Garnish with a drizzle of coconut oil and red chilli and serve hot with phulkas or dal rice.
