Subko starts strong with their foundation – the Thatte Idli. But before we get ahead of ourselves, let's not forget the classics. Subko offers three variations of the beloved podi idli:

Idli innovations: Redefining breakfast

Id(kej)riwal

This ingenious creation has the classic Anda (egg) Kejriwal with the idli. A perfectly cooked fried egg sits atop a bed of sourdough idli, smothered in a creamy cheese base along with curry leaves podi and finished with mint chutney.The contrasting textures and explosion of flavours are a revelation.

Id(sand)wich

Subko doesn't shy away from bold combinations. Their Id-sandwiches come in two variants: The first one is a dal makhani flavour. It’s a blend of textures that includes avocados, caramelised onions, lettuce, feta cheese and vegan aiolion a sourdough base that defies expectations.

The second is a pulled lambstuffing along with rucola, caramelised onions, aioli, and chilli jam on a sourdough idli base.

Id(ba)gel

Inspired by the iconic New York bagel, Subko presents a delightful idli variation. Toasted to perfection, it's topped with cream cheese, tempered scallions and a generous sprinkle of everything bagel seasoning. The savoury, cheesy flavours perfectly complement the idli's subtle tang of sourdough.

Id(piz)zaa

This one is a game-changer. A base of thatte idli is topped with pizza sauce, rucola, maldon salt (natural sea salt) and a drizzle of pesto. This unique fusion dish celebrates the beauty of combining global flavours on a familiar canvas.
