Walnut Barfi – Time to indulge in the goodness

The 11-day Ganeshotsav is celebrated with great devotion, fun, and of course a lot of sweet treats. No matter how many modaks we have, our sweet tooth always craves for more. This Ganesh Chaturthi, you can add some sweetness to the mega celebrations by making a California Walnuts Barfi – it’s easy and oh so crunchy. Time to indulge in the goodness now!

California Walnuts 1cup
Milk ¼cup
Khoya or Mawa 250g
Sugar ¼cup
Ghee or Clarified butter 1tbsp + a little extra for greasing
Cardamom powder ¼cup

Take half a cup of California Walnuts in a bowl and pour milk into it. Let the walnuts soak for an hour and blend them well to form a coarse puree. Heat 1tbsp of ghee in a pan and add the remaining half cup of walnuts. Sauté them until they appear golden in colour. Drain and set them aside.

Now mix the khoya and sugar in the same ghee and blend them well. Add the walnut puree and mix again. Keep cooking it till the mixture gets thick and leaves the sides. Add cardamom powder and fried walnuts and mix them well.

You can now spread this mash on a greased plate and let it set for a few hours. Slice it into pieces and garnish with walnuts. The California Walnuts Barfi is ready to be enjoyed with friends and family!
