Malai Malpua is a traditional, rich sweet that is delicious and easy-to-make. Here is Seema Sethi’s with prize-winning recipe from Diwali contest that is sure to leave your guests impressed. This festive season, indulge in the best of sweets.
For sugar syrup
a few strands
First, prepare sugar syrup with water and sugar. Add one string of saffron for consistency (optional)
Boil milk and reduce it to one fourth. Add maida to get pancake batter like consistency and leave it to rest for 30 minutes.
In a flat bottom kadai add ghee for frying malpuas. Keep the temperature medium, not too hot. Pour ladle full of batter in the ghee and flip over when one side starts getting brown. Remove malpua while straining the ghee, add it to the sugar syrup and remove on a serving plate. Garnish with almonds and pistachio. Serve hot or cold.
