Delicious and nutritious sanwa cutlet

Cutlets are a favourite snack in India; it is a versatile dish that can be made from a wide variety of ingredients such as meat, vegetables, millets etc. A tea-time snack that doubles up as a side dish at dinner, cutlets are crispy on the outside and soft and melt in the mouth on the inside. If you are looking for a snack that is nutritious as well as gluten-free, this sanwa cutlet is your best bet. Made from barnyard millet and packed with protein, Sanwa cutlet is an easy-to-make, healthy and mouth-watering snack.

Sanwa flour 1 cup
Water 1 cup
Chana dal 1 cup, ground
Curd 1 cup
Onion finely chopped
Green Chilli Paste
Potato 1, boiled
Oil half pan
Coriander powder 1tbsp
Turmeric powder ½ tbsp
Cumin seeds 1 tbsp
Black cumin seeds
Salt to taste

Cook the Sanwa flour in hot water. Mix the ground split chickpeas (chana dal) with curd and the boiled potato, and make a paste. Add cumin and black cumin seeds, fine chopped onion, ginger, garlic and green chillies to it. Add the cooked Sanwa and the potato chana dal paste and mix it well. Lastly, add coriander and turmeric powder and mix.

Heat the oil in a pan. When the mixture cools down, shape it into a cutlet and fry. Serve hot with ketchup, sauce or chutney.
