A hearty Jowar khichdi to drive your hunger pangs away

This healthy twist to a well-known comfort food is the best way to add nutritious millets to your diet. Jowar khichdi, made from sorghum is packed with iron, fibre and folic acid and is highly recommended for diabetics and celiacs. Try this delicious and hearty khichdi with a millet twist today!

Ingredients
Whole jowar ½ cup
Red capsicum ¼ cup, finely chopped
Green capsicum ¼ cup, finely chopped
Cumin seeds (jeera) 1 tbsp
Green chillies 2 tbsp, finely chopped
Asafoetida (hing) ¼ tbsp
Milk ½ cup
Coriander ¼ cup, chopped
Salt to taste

Method
Soak the whole jowar overnight in water. Drain the water in the morning and combine the soaked jowar with one cup of water and salt in a pressure cooker, and pressure cook for five whistles. Allow the steam to escape before opening the lid. Keep the cooked jowar aside without draining the water.
Heat oil in a non-stick pan and add cumin seeds to it. After a few seconds, add asafoetida, green chillies, red and green capsicum and cook for two minutes on medium flame.
Add a little salt and the cooked jowar with water. Mix well and cook for five minutes. When the water dries, add milk and cook for 2-3 minutes on medium flame.

Finally sprinkle coriander leaves and cook for two more minutes. Serve hot.
