Soups are your best bet to get through chilly winter nights when you are craving for a hearty meal but are too cold to whip up something elaborate. Soups are healthy, filling and best of all, a great comfort food.
This winter, chase away the blues as Godrej Appliances brings you this wholesome carrot soup recipe, that is nutritious, easy-to-make and most of all, extremely delicious.

Ingredients

Carrot chopped 1 ½ cups
Sweet potato chopped 1 cup
Onion chopped 1 cup
Vegetable broth 1 cup
Coconut milk 1 cup
Ginger sliced ½ tsp
Garlic chopped ½ tsp
Curry powder ½ tsp
Pepper powder 1 tsp
Salt to taste

Method
Take a microwave safe bowl, and add all the ingredients except the coconut milk and the vegetable broth. Mix well and place the bowl in the oven.

Select micro mode high power, set time for 4 minutes and press start.

After the oven beeps, remove the bowl and add the coconut milk and vegetable broth. Mix well and cook again for 8 minutes.

Remove, allow the soup to cool and blend in the juicer. Drain the soup, reheat and serve hot.
