Healthy cold salad recipe with buckwheat to beat the heat

The onset of summer season calls for a change in the diet. We tend to gravitate towards a cool, light and liquid diet. As fresh vegetables and fruits are in abundance during the season, salads make a perfect meal. It is healthy, light on tummy and easy-to-make.

This cold salad with Broccoli, Bell peppers and walnuts is not only a perfect way to beat the heat but also nutritious to maintain the immunity. The salad also contains buckwheat (also known as Kuttu), which is a gluten-free superfood that is high in protein and natural fibre. Ingredients
Healthy Alternatives buckwheat groats 1 cup
Water 2 cups
Salt ½ tsp
Chayote squash ½, finely diced
Green olives 12 large, pitted and quartered
Yellow bell pepper 1 small, diced
Broccoli florets 1 cup, chopped
Red onion ¼ cup, finely chopped
Healthy Alternatives walnut 50g, chopped
Fresh dill½ cup, chopped
Fresh mint 2 tbs, chopped
Lemon 1, juiced
White wine vinegar 2 tbsp
Healthy Alternatives olive oil 1 tbsp
Salt ½ tsp
Black pepper ½ tsp


Method


In a small saucepan, bring water and salt to boil. Add buckwheat groats on reduced heat, cover and cook for about 10 minutes until all water has absorbed.


Remove the lid and cool for about 30 minutes. You can also cook your buckwheat groats the previous day and let it cool overnight.


Add all ingredients listed above, including cooled buckwheat to a large mixing bowl. Mix until well combined. Serve immediately or refrigerate for a few hours (or overnight) to allow for the flavours to develop.
