A soup to keep you chilled and refreshed this summer

Ditch the sugar-laden slushies and cold drinks this summer and opt for a refreshing, chilled soup instead. It’s filling, easy to make and packed with nutrition. Plus it’s a no-cook soup so you will spend way less time in the kitchen in this sweltering heat. So go ahead, treat your family to this unique meal in a cup and take a chill pill!

Serves: 4

Ingredients

The soup

Cucumber 400g, peeled and roughly chopped
California Walnuts 100g
Greek yoghurt 220g
Spring onions 3, roughly chopped
Garlic 1 clove, minced
Tarragon a small bunch
Mint sprigs 2-3
Basil small bunch
Lemon juice 30ml (and a little extra)
Extra virgin olive oil 70ml
Salt to taste
Black pepper a pinch

The garnish

Ice cubes 8
Radish 2, thinly sliced
California Walnuts 50g, toasted
Mixed herbs few
Salad leaves few
Extra virgin olive oil to taste

Method

Prepare the soup by blitzing all its ingredients in a blender. Keep blending until the mixture has a smooth texture. Season it with salt and pepper, adding a little extra lemon juice if you want.

Pour the soup into four bowls and garnish with your choice of fresh herbs and leaves, sliced radishes, toasted walnuts, and a drizzle of extra virgin olive oil.

The chilled soup is ready to keep you cool! You can relish it till the last sip by popping one or two ice cubes in each bowl to keep the soup super chilled.
