Sweet and nutritious Kodo kheer

Millets have been classified as superfoods because of their health benefits. Highly nutritive and power-packed with phytochemicals and antioxidants, these gluten-free millets are a must on every health-conscious individual’s plate. Kodo millet, also called bhagar millet or kodon millet, is high in fibre and essential minerals. It is a rich source of iron and calcium and the perfect replacement for rice. This rich and creamy kheer made from kodo millets is nutritious and easy to put together.
Cashew nuts, almonds, raisins, chironji or charoli
Heat the milk in a pan. Wash the kodon thoroughly and soak it in water for 15 minutes. When the milk is boiled, add kodon and cook it on a low flame.
When the kheer is completely cooked, add desiccated coconut and finely chopped cashew nuts, raisins and chironji to it. Add sugar to the cooked kheer and mix it well.
Heat ghee in a pan and roast khoya (mawa) till it turns golden. Remove the kheer into a bowl and garnish it with roasted khoya before serving.
