It is believed that the first 10 percent of a task takes 90 percent of the time. But hey, with your leftover chicken curry, more than half the work for this recipe is done! Separate the chicken pieces from the curry and chop them finely. Mix them with chopped almonds, walnuts, raisins, diced celery, apple and spring onion and mayonnaise. This curried chicken salad is super crunchy and yummy. And most importantly, it’s ready in no time!
This is another delicious dish to make good use of your leftover chicken curry. Take some red, yellow, or green peppers (or capsicum) and hollow them out. Blanch them and brush some oil on the sides. Sauté chopped onion, garlic and veggies of your choice in a pan. Take the chicken curry in a bowl and add some rice (it’ll be great if you have leftover rice too!) along with finely chopped celery and the sautéed onion-garlic mixture. Add spices and lime juice as per your taste. Now stuff the peppers with this filling and bake them in a preheated oven. You can creatively use your leftover chicken curry to make a biryani. Parboil Basmati rice with bay leaves and cardamom. Spread half the rice in a greased pot and evenly pour half the chicken curry over it. Now top this with fried onions, chopped coriander and garam masala. Spread the remaining rice on top of this, followed by the curry and other toppings. Don’t mix any of these layers. Tightly seal the pan with a foil and a lid to begin cooking. Yay! Chicken biryani is ready in less than half its usual time – thanks to the leftover curry!
All you need to prepare a chicken burrito is chicken curry, pre-cooked beans (rajma) and chopped onions. It’s as simple as it gets! Mix all of these together (along with some rice if you wish) in a pan and cook it for some time. Place this mixture in a line in the middle of a flour tortilla. Grate some cheese over it. You can also spice it up with some salsa if you like. Wrap the burrito and bake it in an oven. You can try using a different combination of veggies and sauces every time you make it – you’ll be pleasantly surprised with the results!
