Spring Fennel Salad with Candied Orange and Walnut Coffee Brittle

Wedding season is around the corner and it’s important for the brides (and grooms) to look their very best. This spring fennel salad with California Walnuts is loaded with antioxidants and is super tasty as well. No wonder it’s the perfect detox recipe to help them achieve that ultimate glow for their Big Day!

Serves: 2

Ingredients

The Caramel Walnuts
California Walnut halves 1/2 cup
Brown sugar 1/4 cup
Butter 1 teaspoon
Salt a pinch
Instant coffee a pinch

The Candied Oranges
Large orange 1/2
Sugar 1/2 cup
Water 1/2 cup

The Salad Dressing
Olive oil 1 tablespoon
Moscato or red wine vinegar 1 tablespoon
Cumin 1/4 teaspoon
Honey 1 teaspoon

The Salad
Watercress 1/2 cup
Micro greens or baby spring mix 1 cup
Medium sized carrot 1, sliced into thin matchsticks or using a julienne peeler
Fennel 1/8 cup, thinly sliced
Parsley leaves 1 tablespoon, chopped
Goat’s cheese 4 tablespoons
Candied oranges quantity prepared earlier
Walnut brittle quantity prepared earlier

Method

To make the caramel walnuts, melt brown sugar and butter in a medium cast iron or heavy bottom skillet over medium-high heat. Add the walnuts and stir till they get coated in the mixture. Reduce the flame to medium-low and cook for seven minutes as the mixture thickens. Stir constantly. Mix in the salt and instant coffee. Use a rubber spatula to pour the mixture onto parchment paper on a pan in a single layer. Once cooled, break the walnuts apart.

For the candied oranges, slice half an orange into thin slices, then quarter. Mix the sugar and water in a medium shallow skillet or pan over medium heat. Stir to dissolve the sugar. Add the oranges in a single layer and cook for eight or nine minutes. The mixture should coat the oranges. Remove the slices once they darken and are soft to the touch with a fork. Place orange slices on a drying rack to cool. Store the extra syrup in the fridge for a cocktail!

Make the salad dressing by whisking all the ingredients together.

Layer all the ingredients to put together the salad and toss with the dressing.
