A wholesome dish that can be eaten on its own as a light lunch or dinner, or teamed with others, power-packed sweet potato is an interesting combination of healthy ingredients. Take the two sweet potatoes and pierce each one with a fork at multiple places. Rub salt and oil on the surface. Place them in a microwave for about 10 minutes. Remove and keep aside.Place chopped spinach and mushroom in a small bowl. Add garlic and 1/4tsp of oil. Microwave for one minute. Take the microwaved sweet potato, cut in half. Top with the cooked spinach and mushroom. On top of the spinach and mushroom, place the egg (sunny side-up). Top it up with grated cheese. Your dish is ready.
