Hing ka Achaar: A tender raw mango pickle that uses just four ingredients

Don’t go by the name, tender raw mangoes are the star of this Hing ka Achaar! All it takes are four ingredients to make a batch of this simple pickle. The combination of raw mangoes and hing is a match made in heaven! Hing ka Achaar goes well with just about anything and lasts more than a year. Rushina Munshaw Ghildiyal showed participants how to make this versatile pickle during the #AamAchaarDay event at APB Cook Studio.

Raw mangoes 1 kg, peeled and chopped
Salt 3 cups
Chilli powder 1/3 cup or as per taste
Dehradun hing 1g or hing powder up to 3 tsp (adjust according to strength)

Mix the chopped raw mangoes, salt, chilli powder and hing together. Place the mixture in a jar, close tight and leave it in the sun for a few days. It will be ready to eat in a few days.
