Teriyaki Chicken And Veggie Noodles

Here is the third lip-smacking recipe from Chef Rakhee Vaswani’s cookbook Picky Eaters specially made for little ones who turn up their noses at healthy food. Packed with flavour, these healthful recipes make for great lunch-box ideas! Try them out and watch your picky darling come back for seconds and thirds!

We bet your child enjoyed the Grilled Chicken with Paprika Sauce and Brown Rice Pilaf and the Oats and Moong Dal Tikki Frankie that we shared a few days ago. Now, we are back with yet another lip-smacking recipe. Move over instant noodles! This silky, oriental-style dish is a great way to ensure that your child gets essential nutrients and fibre from the veggies and proteins from the chicken and eggs.


Boneless shredded chicken (leg portion) 100 gms
Boiled noodles 1 packet
Red, yellow and green peppers sliced ¼ of each
Blanched Broccoli 3 to 4 florets
Sliced white and green parts of a spring onion
Zucchini slices 3 to 4
A handful of bean sprouts
Minced garlic 2 teaspoons
Teriyaki sauce 2 tablespoons
Oyster sauce 2 tablespoons
Soya sauce 2 tablespoons
White pepper powder ½ teaspoon
Salt to taste
Oil 2 tablespoons
Scrambled eggs 2


Heat 1 tsp oil in a wok and add chicken to it. Season it with salt and white pepper powder and keep it aside. Heat 1 tsp oil in a wok again and season the scrambled eggs with salt and pepper. Keep them aside. Fry the garlic and all the vegetables except the bean sprouts in the remaining oil for a few seconds. Fry the chicken, eggs, noodles, teriyaki sauce and oyster sauce on high flame for a minute and season well. After switching off the flame, add the sprouts and toss well. Pack the noodles in the lunch box with a small container of soya sauce for flavouring.
