Back To School Lunch Box Recipes: Oats And Moong Dal Tikki Frankie

Here is the first lip-smacking recipe from Chef Rakhee Vaswani’s cookbook Picky Eaters specially made for little ones who turn up their noses at healthy food. Chock full of protein and fibre, this scrumptious wrap is a healthier alternative to the store-bought ones that children love.

Ingredients
Yellow moong dal (split yellow gram) ½ cup
Quick cooking rolled oats ½ cup
Fresh curd 2 tablespoon
Roasted besan 1 tablespoon
Finely chopped green chillies ½ teaspoon
Chaat masala 2 teaspoons
Chilli powder 2 teaspoons
Garam masala ¼ teaspoon
Turmeric powder ¼ teaspoon
Ginger-garlic paste 1 teaspoon
Fine chopped coriander (dhania) 1 tablespoon
Minced onion 1 tablespoon
Chilli garlic sauce 1 tablespoon
Salt to taste
Oil 2 teaspoons, for greasing and cooking
Roti wraps or tortilla wraps for Frankie

For the frankie masala
Amchur powder 1 teaspoon
Chilli powder ½ teaspoon
White pepper powder 1 teaspoon
Salt 1 teaspoon

Method
Clean, wash and boil the moong dal in 1 cup of water till it is soft. Ensure all the water has evaporated. Drain and blend the dal in the mixer into a coarse paste. Transfer the paste into a bowl with the remaining ingredients except for the chilli garlic sauce and mix well. Reserve some oats for coating the tikkis. Divide the mixture into 12 equal portions, shaping each into long sausage-shaped roll. Coat each roll with oats. Lightly grease a non-stick pan with ½ teaspoon of oil. Cook each roll in the pan with minimum oil.

Mix the ingredients for the frankie masala in a bowl and sprinkle it on the rolls. To assemble the frankie, roll the roti or the tortilla wraps over each cutlet after adding some minced onion and coriander. Serve with chilli garlic sauce.
