Shrimp 12-15 small to medium, deveined at room temperature
Extra virgin olive oil 1/2 cup
Garlic 1/2 tbsp, finely chopped
Dried red pepper 1/2 tsp, mildly hot
Hot water 1 tbsp
Salt 1/4 tsp
Chewy country bread 4 to 6 slices

Serves 2

Rinse the shrimp and wipe dry with paper towels. Keep aside. Mix the olive oil, garlic and hot pepper in a pan. Place it on a medium-low flame on the stove. Warm the pan, gradually raising the heat to medium or medium-high until the oil is hot. Continue to cook for 2 to 3 minutes until the garlic sizzles and just turns golden, stirring occasionally. Immediately add the shrimp and cook for 2 to 4 minutes (depending on the size) until they are firm and curl up. Sprinkle with 2 tablespoons hot water and pinches of salt. Serve it immediately from the pot with the bread to soak up the delicious oily sauce.
