An exciting encore of Home Chef Matters 2.0 – Lost Recipes

The second edition of Home Chef Matters, which was organised by the Food Bloggers Association in association with Vikhroli Cucina and co-presented by California Walnuts. The event saw the best and brightest of the food world gather to discuss, debate and decode how home chefs could sustainably scale up a business as well as how India’s traditional recipes could be saved from getting lost. The event was held at St. Regis Hotel in Mumbai on 24th November 2017.   • Sameer Malkani, Co-founder, Food Bloggers Association of India (FBAI), welcomed participants and speakers to Home Chef Matters 2.0 – Lost Recipes.

  • Sujit Patil, Vice President and Head - Corporate Communications, Godrej Industries Limited and Associate Companies, spoke about how Godrej  is playing a part in the food space through platforms such as Home Chef Matters . The event aims to create an ecosystem for stakeholders (including home chefs, chefs and restaurateurs) to come together to gain new insights, learn and cross-pollinate ideas with each other.

  • Naaznin Husein, President - Indian Dietetic Association (Mumbai Chapter), listed the top 10 reasons to eat walnuts and busted several myths surrounding it.

  • Celebrity chef Vicky Ratnani’s candid chat on eating seasonal and local struck a chord with the audience. He pointed out the sheer variety of produce available in India and explained why eating seasonal is the next big thing. The audience was also treated to trailers of the second edition of his web series Vicky The Gastronaut, which is based in Australia.

  • Chef Rakhee Vaswani shared her top pointers on how to present and style food like a professional. “Play with colours, textures and garnishes” was her advice to the participants.

  • Chef and renowned food photographer Nitin Tandon gave the audience a glimpse into the process of what it takes to makes a food picture Insta-worthy. His top tip? Keep it natural and focus on the minimal.

  • All smiles at Home Chef Matters 2.0 – Lost Recipes. The audience at the day-long conference got insights and inputs from a medley of people in the food space. This included renowned chefs such as Vineet Bhatia, Hemant Oberoi, Ranveer Brar, Irfan Pabaney, Saransh Goila, Varun Inamdar; food personalities Rashmi Uday Singh and Kunal Vijaykar; and Kalyan Karmakar and Rushina Ghildiyal.

  • An interesting panel discussion on how home chefs can scale up and sustain their businesses.   • Amrita Raichand, the brand ambassador for FBAI Kids, introducing the new venture, which is a one stop shop for food and lifestyle, meant both for mothers and children. Amrita also spoke about the importance and relevance of providing proper nutrition for children.

  • Five culinary legends took to the stage for a thought provoking discussion on what Indians could do to save their traditional recipes from being lost or forgotten. (From L-R) Kunal Vijaykar, Chef Hemant Oberoi, Chef Ranveer Brar, Rashmi Uday Singh and Chef Vineet Bhatia.

  • Celebrity chef Saransh Goila gave examples of his renowned dishes such as Goila Butter Chicken and Chocolate Golgappa while speaking about the delicate balance between innovation and staying true to traditional recipes.

One of the highlights of the day was the scrumptious lunch featuring lost recipes and regional delicacies, which was cooked by these eight home chefs.

  • During the ‘Creative Hour’, five teams of home chefs and food bloggers participated in a cook-off, where they had to rustle up lost recipes in 30 minutes using Godrej Vegetable Oils and California Walnuts.

  • Somasree Bose, Head Marketing, Godrej Consumer Products Limited presented the Godrej protekt Master Chef Award to the winners of Lost Recipes cook-off contest. SR Surve, Associate Vice President, Veg Oils Division presented Godrej Veg Oils hamper to the winners. The teams were judged by an eminent panel comprising of Kunal Vijaykar, Chef Irfan Pabaney and Anjali Pathak.

  • Swathi Rathi, Marketing Head, Godrej Appliances held an interesting conversation with Karishma Chawla, who specialises in sport fitness, naturopathy and nutrition. Ms Chawla enlightened the audience about the relevance on eating healthy in today’s time. She stressed on balancing out eating right and eating healthy. Ms Rathi broke the myth of microwave food and gave tips on healthy cooking.

  • Chef Pallavi Nigam demonstrated how easy it is to cook healthy dishes using a Godrej Appliances microwave.

  • Celebrity chef Harpal Singh Sokhi spoke about how India’s traditional recipes, which are in the danger of getting lost, could be documented through videos and uploaded on YouTube.

  • Rushina outlined how home chefs could carve their niche in the crowded food space and what they could do to take their techniques to the next level.

  • Chef Varun Inamdar decoded the logistics of supply chains and how to overcome challenges in sourcing ingredients.
